I have a few good recipes to share with you. Very practical and easy to make.
We’ll begin with Kale chips and Cheese Pairings for appetizers, matched with a really good Pinot Noir red wine. I chose the new release from Testarossa Winery – 2010 Pinot Noir from Santa Lucia Highlands (Apellation Series).
To complement that, you can choose between a hearty grain meal consisting of Farro with Swiss Chard; or a light Shrimp Stir-fry. Both are one-dish meals.
The Farro dish was a big surprise to me on the contrast of flavor and texture. Farro is often confused with Spelt (another grain), and they are not the same. Farro (“Triticum Diccocum”) is a grain cultivated in Italy (specially Tuscany) and now is widely available in the US on it’s best form: perlato (or semi-pearled); meaning that some of the husk or outer rough skin was removed. I would say that farro’s recent popularity has to do with it’s nutritional content; high in protein and fiber, low glycemic index and low gluten content. Besides, it’s easy to cook, has a great nutty taste and you can enjoy in salads, soups or as a main dish
The Shrimp Stir-fry is a healthier version of the chinese popular meal. You can serve with white or brown rice.
